  • 20 gm chopped cashews
  • 10 gm chopped melon seeds
  • 500 gm sugar
  • 250 ml water
  • 1 pinch saffron
  • 3 cup ghee

How to make Ghevar

Step 1

To prepare this authentic Rajasthani delicacy, heat some ghee in a heavy-bottomed pan and once the ghee is hot enough, turn off the flame and add ice cubes. This will extract the impurities and only pure ghee will remain in the pan.

Step 2

Make sure you beat the ghee and ice well until the texture turns foamy. Now add flour to the ghee and prepare the batter. Heat ghee in a heavy-bottomed pan, place a circular mould and start pouring the batter in center, fry till it is golden brown.

Step 3

Now, to prepare the sugar syrup for the main dish, heat water and sugar till the sugar dissolves completely. Add the fried Ghevar to the warm syrup and remove.

Step 4

To make the malai, heat milk, sugar, cardamom powder, saffron and reduce to half. Allow the malai coating to settle down and thicken. Top the malai on the ghevar and garnish with chopped nuts and saffron strands.
